Introduction

Shortly after turning off Provincial Highway 9 to Luoshan Village, tourists can see the main settlement spreading across both sides of the road. Going eastward to Luoshan Waterfall at the Coastal Mountain, you start climbing upward for about 4 km. Following the sign, tourists then arrive at Luoshan Organic Tofu Farm. You can see two rural buildings with tables and chairs in between. The stoves and stone mills to the side are served as tools for visitors to experience “volcanic mud tofu.”

Lin Shu-Ping, whose grandfather moved from Western Taiwan to Luoshan during the Japanese Colonial Period, mentioned that at that time, supplies were insufficient. The Japanese in Luoshan made tofu with coagulant from volcanic mud. The people then imitated the method. Most of the dry farms in the mountain where water is not easily accessible grow grains. It is every household’s daily routine to make tofu. Later, with good public transportation and boosted economic conditions, homemade tofu became rare. It wasn’t until the 1990s during community construction that the elderly people of the community became nostalgic for volcanic mud tofu and it became a leisure agricultural experience activities.

Features of Agricultural Tourism

Grains

After soaking the organic soybeans overnight, you can push the stone grind yourself to grind the beans and experience the hardships of the early farmers; for many people who grew up in the countryside and are now over 60 years old, stone grinding can be the most tiring task of their childhood.

Put the grounded bean dregs and juice into a large pot and boil. After filtering the bean dregs, taste the original soy milk, then pour it back into the pot and reheat it. When the soy milk reaches boiling point, slowly add the volcanic water, and the tofu will appear after 7-8 minutes of solidification. Drag it up and mould it for 3 minutes and it becomes the hot volcano tofu ready to be served.

When you open the wooden box and see the tofu, shouts of excitement are common. Many people who have eaten tofu their whole life, only now gain their first chance to participate in the production of tofu, and witness soybeans transform into Luoshan’s unique mud volcanic tofu in the span of an hour. Children who refused to drink soy milk and tofu as soon as they got off the bus, finish up their tofu and soy milk after experiencing these activities. Their newfound appreciation is evident in the laughter of the family.
